Three-Layer Mango Dip

8 oz. cream cheese
4 oz. cottage cheese
1 8 oz. jar mango chutney
1/4 c. chopped peanuts
1/4 c. thinly sliced scallions

  1. in food processor, puree cream cheese and cottage cheese until smooth and creamy
  2. spoon cheese mixture into serving bowl
  3. using a knife, make a 1/2 inch deep channel in cheese mixture around edge of bowl
  4. spoon chutney into channel evenly around bowl (be sure to leave most of surface of cheese mixture chutney-free)
  5. sprinkle chopped nuts over remaining surface of cheese mixture
  6. sprinkle sliced scallions over chopped nuts

Serve with fresh apple slices or crackers for dipping.
