Blackened Swordfish


swordfish steak
blackening seasoning
1/4 c. flour
2 T - 4 T canola oil (depends on how much fish you are cooking)
1 - 2 c. milk (depends on how much fish you are cooking)

  1. Soak swordfish in shallow dish of milk for 30 minutes, turning halfway thru
  2. Mix blackening seasoning with flour until you have a blend of 80/20 seasoning to flour
  3. Heat oil in skillet to the point where it just begins to smoke
  4. Coat fish with seasoning/flour blend
  5. Cook swordfish 4 minutes on first side, and 3-4 minutes on second side, depending on how thick the steak is
