swordfish steak
blackening seasoning
1/4 c. flour
2 T - 4 T canola oil (depends on how much fish you are cooking)
1 - 2 c. milk (depends on how much fish you are cooking)

- Soak swordfish in shallow dish of milk for 30 minutes, turning halfway thru
- Mix blackening seasoning with flour until you have a blend of 80/20 seasoning to flour
- Heat oil in skillet to the point where it just begins to smoke
- Coat fish with seasoning/flour blend
- Cook swordfish 4 minutes on first side, and 3-4 minutes on second side, depending on
how thick the steak is
